2000 dpi (both input and output resolution) should be more than sufficient. If you print no larger than 5x7 you could get away with 1000 dpi, but that's pushing it. You might slightly compromise sharpness. I'd stick with 2000 dpi for images you don't plan to enlarge more than 7x (8.5x11 paper).
